This week I made pulled pork for supper from a mystery cut of pork. This was our first year butchering our own pigs and I didn't know how to label anything. The packages in the freezer have lots of question marks and random descriptions on the paper. That evening the menu was "Leg-with-Hock". Hock is the lower part of the leg before you get to the foot. On its own I'd add it to a pot of simmering BBQ beans. Whatever it was, it was delicious. I rubbed it with spices, added a splash of apple cider vinegar, and slow roasted it all day. While we are cleaning up and I'm shredding the rest of the meat left in the roaster, my 6 year old peeks over my shoulder and says, 'so thats a bird'? 'No, ' I reply with a chuckle. I am so confused. This looks nothing like chicken. 'Isn't it like an eagle or something?' He presses. 'What?' I can't keep from laughing, and then it dawns on me... No, we don't eat eagle in our house, or hawk. But we do eat lots of other yummy things. Here is the quick link to our two week meal plan. I've included some recipes too. I hope you find something new to try or are reminded of some family favourites.
New on the BlogThe FarmYikes! It was ridiculously cold this week. The coldest was -46 degrees with the wind chill. We constructed a quick little warming hut inside the barn to help retain the heat from the heat lamp. The kitties and goat snuggle up there. The chickens don't seem as bothered, but every winter the new rooster's tips of their combs have turn black and fall off. By spring it looks like they got a buzz cut! The HomeTim says: check your furnace intake and exhaust pipes to make sure that they aren't plugged with snow or ice, as it could cause your furnace to stop. Knock off any ice that might be built up or snow thats blown in, it could save you a call to your plumber. The FamilyEveryone chipped in to load a few hundred pounds of beef into the freezer this week. Restocked for another year. P.S Thank you so much for subscribing and supporting our family. I am blown away by your encouragement. It means so much to us. Please feel free to share your feedback as we really want to do a good job serving you through our written content as well as our farm produce (let's dream about spring while in a polar vortex). |
